Introduction

What can be better than cool, yummy ice cream in the heat of the summer?

Providing both a hands-on learning experience and a delicious treat the liquid nitrogen ice cream is always big success!! It is simply made with a mixture of heavy cream, milk, chocolate and sugar that is frozen to a consistency of ice cream using liquid nitrogen. But don't worry, the nitrogen evaporates on contact.

CAUTION

WARNING: Liquid nitrogen is EXTREMELY cold (-196 C) and will cause skin burn if in contact for more than 1s. Take precaution and be sure to protect eyes, fingers and exposed areas of skin. Do not attempt this experiment without the proper supervision.


Ingredients

You can choose different ingredients, but chocolate has been the favorite so far.
  • 1 liter of heavy cream (half and half can be subsituted, but it will alter the taste and consistency)
  • 1/2 liter milk
  • Hershey Chocolate syrup
  • 1/2cup sugar
  • 4-5 liters of liquid nitrogen


Tools

  • Stainless steel or glass bowl (Do not use anything that will crack under extreme cold, such as plastic
  • A wooden spoon
  • Gloves
  • Goggles

Mix everthing in a stainless steel bowl. Use a wooden spoon to stir. Mix and taste. It should taste good, i.e. bad for your diet... think about the movie Chocolat. I am sure Juliette Binoche (or Johnny Depp) would approve this recipe. While stirring constantly, slowly add the liquid nitrogen into the bowl. Use gloves and eye protection. It does get cold! Mix until you have a creamy ice cream, Carvel-ish, or keep it going until you have a Cassata-like consistency. If the mix is too hot it will "boil" and make a lot of nitrogen bubbles. The final step is to serve and eat. This stuff is good. Be sure to serve while cold before melting begins. Enjoy!
